Here’s my version of stuffed bitter gourd fry:
- Bitter Gourd
- Red chilly
- Curry leaves
- Garam masala powder
- Coriander powder
- Vegetable Oil
Add a teaspoon of oil and fry Groundnuts, coconut, red chilly and curry leaves
Add them to a mixer jar along with Coriander powder, garam masala (spice) powder, turmeric and salt
Grind it into a coarse powder (not too fine)
Slit the bitter gourd into half and remove the seeds as shown above
Add some turmeric and salt and let it rest for about 20 minutes. After 20 min, squeeze out the water from each of the gourd.
Stuff the powdered masala into the bitter gourd and shallow fry in oil until it is soft. Your healthy side dish is now ready!
