- Iceberg lettuce
- Bell Pepper – Green, Red and Yellow
- Red Cabbage
- Broccoli – Boiled or tossed
- Baked Kidney Beans and Chickpea (recipe below)
- Baked Sweet Potatoes (my fav part of the dish!)
Chop or shred all the veggies.
Baked Beans and Sweet Potato
You will need some pre-boiled beans. I have used Kidney beans and Chickpeas that I soaked overnight and pressure cooked. Add salt, pepper, chilly powder/paprika, oregano and some olive oil to them. Give it a nice mix and lay it on a baking tray. Pre-heat the oven at 180 degree Celsius and bake them for 12 min.
For the Sweet Potatoes, Add some salt and pepper and repeat the same baking process.
This is my own version of dressing. Use a jam jar or any glass jar for this. Add 3 parts of olive oil to 1 part of lemon/lime juice. Add 3 cloves of crushed garlic, some pepper, chilly flakes/paprika and Oregano flakes. The olive oil always forms a layer on top of the lemon juice. Mix well to combine everything. You can also add a teaspoon of Dijon Mustard paste to elevate the taste.
Put together the chopped veggies, drizzle some dressing along with some grated cheese and enjoy your guilt free, healthy meal!
